INDIAN WELLS — The Sands Hotel & Spa and its acclaimed restaurant, The Pink Cabana, have announced an indulgent lineup of holiday dining experiences designed to elevate Christmas Day and New Year’s Eve celebrations in the Coachella Valley. With menus crafted by Executive Chef Jason Niederkorn, guests can expect a sophisticated blend of classic holiday comfort and fresh, inventive cuisine.

A Refined Christmas Day Feast

On Christmas Day, diners are invited to savor a prix fixe feast showcasing premium seasonal ingredients and Chef Niederkorn’s polished culinary style. Main course offerings include a Niman Ranch Christmas Ham with spiced citrus glaze or Creekstone Farms Prime Rib with horseradish crème—both accompanied by an array of decadent sides such as whipped russet potatoes, roasted Brussels sprouts, coconut milk yams with pepitas, and creamed pearl onions with local mushrooms.

The meal begins with a choice of Roasted Chestnut and Apple Velouté or a Chicory Salad highlighted by poached pear, toasted pecans, Point Reyes Blue Cheese, and pomegranate. Dessert brings the best of the season with both Pumpkin Pie topped with Chantilly cream and a warm Apple Crostada paired with vanilla bean ice cream.

Guests may enhance their dining experience with an optional wine pairing curated to complement each course.
Christmas Day pricing: $120++ for adults, $160++ with wine pairings, and $40++ for children 12 and under.

A Stylish New Year’s Eve at The Pink Cabana

Ring in 2026 with casually elegant glamour as The Pink Cabana hosts an entertainment-filled New Year’s Eve celebration. The evening features a five-course dinner that balances indulgence with bright seasonal flavors.

Guests will begin with a White Truffled Egg with Osetra Caviar, followed by a choice of Wild Gulf Prawn Cocktail or Chioggia Beet Salad. The second course offers either De Puy Lentil Soup with winter truffle crème or a housemade fettuccine with local mushrooms and Meyer lemon.

For the entrée, Chef Niederkorn presents two standout dishes:
• Spanish Fluke with potato purée, melted leeks, and osetra caviar crème
• Masami Ranch Wagyu Denver Steak accompanied by dauphine potatoes, root vegetables, and a green peppercorn sauce

A dessert dégustation and a curated progression of French wines round out the evening. Festive extras—including oysters on the half shell and Osetra caviar with Pink Cabana tots—add to the celebratory spirit.

New Year’s Eve pricing: $179++ per person or $239++ with wine pairing. Vegetarian options are available.
Seating begins at 5:30 PM, culminating with a lively 9 PM Times Square–style New Year countdown.
